these were super exciting to try. i subbed the egg for 1/4 cup of apple sauce and the butter for a tbsp of oil.

they cooked easily and came out in the cutest shade of purple. they are soooo sweet. i didn’t even need to add maple syrup.

i topped mines with heaps of diced strawberries, pepitas, cacao nibs, and drizzled some yogurt. the texture is very squishy and sticky. i’m not even looking forward to having to use up this whole box tbh 😭 also do not let your pancake soak up too much liquid on your plate; like syrup or yogurt because this thing soggy—is not it 👎
