Kofu is Tofu made from chickpeas! 😎 This one has smoked salt added, but I didn’t really taste it lol. It was still delish 🧂 Chickpea tofu has been prepared by the Shan people in Myanmar for generations, which is why it is also known as "Shan tofu" or "Burmese tofu". 🇲🇲 The wonderful things about kofu are that it consists of few ingredients, that it tastes good and is quick and easy to prepare. In addition to the taste, I especially love the consistency of the fried Kofu: crispy on the outside and creamy on the inside! 🤤 Besides water, chickpeas are the main ingredient in kofu. For this purpose, dried chickpeas are ground into a fine flour. This flour is boiled with water, salt and spices to make a porridge (similar to a polenta). 🥣 The hot pulp is filled into molds, where it cools down and takes on a firm consistency. 💪They make kofu in a small factory in Berlin. The chickpea flour comes from an #organic certified mill in Germany - the chickpeas themselves are from Italy or Turkey 🇹🇷 🇮🇹. All other ingredients are also organic. #impactfulapril
