Cold soba salad

What a pretty dish this is! The soba is al dente. The veggies are glorious! Not too salty. Overall a great combi. Again there is not much dressing. This was really healthy and comforting! I feel that it’s more western than Japanese as it’s essentially Soba noodles in a salad 🥗 loads of fresh veggies. They didn’t give much vegan mayo so it was quite bland; I asked for more and it was much better. The cashews were the most flavorful thing in the dish. Would’ve been nice to have tofu, legumes etc as protein sources. Still for soba, I prefer the traditional cha dipping sauce. I would go for that next time but with the set meal as the ala carte cold cha soba is quite plain and not very filling.
