Black Bean Ginger Vinegar Stew

This must be the veganised version of black vinegar pig trotters. Even though it has been more than 20 years since I last ate pigs, this still tastes very convincing. It is a little oily and the portion is a bit small. But the taste is great and it’s very creative.

I like all the ingredients. They are three of my favorites, with black fungus too.
