South Asians are good at turning anything into curry, and that’s exactly what I did. I took these Beyond Steak plant-based seared tips and made a Sri Lankan-style beef curry (swipe left for the image 🙈).
In Sri Lanka, beef curry isn’t something you eat every day. It’s less common, partly because of religious reasons and also because many households simply can’t afford to make it often. Now, I can’t say how close this is to the real thing since I grew up vegetarian, but there’s something special about taking the recipes you grew up with and making them plant based. I cooked it in a tamarind and coconut milk base, with both raw and roasted curry powders and the usual mix of spices. It came out rich, hearty, and deeply familiar. 😇
