Once you take it out of the vacuum, it needs to be well marinated (I use the roast oil from the same company, with lots of rosemary). I prepared it in the oven with some roast potatoes, but it doesn't need too long to cook and you should keep it moist. I enjoyed the final result, as the texture is chewy/flaky and works pretty well.
