Veggie Pad Thai (with modifications)

Thai Lemongrass is super accommodating when it comes to dietary restrictions - I always get the Gluten Free Vegan Pad Thai with extra veggies and it is amazing. There are chunks of tofu, bean sprouts, broccoli, carrots, and bok choy all set on a bed of rice noodles.
