You would think the nutritional value of a cucumber salad should be pretty good but with the amount of oil in it I don’t think it is. I have always loved Asian cucumber salads ever since my mom would make them for me growing up. This one was fantastic! So much flavour from the huge chunks of garlic, spring onion, coriander, chili, and lots and lots of oil. Super satisfying and I even sopped up the rest of the sauce with my partner’s leftover spring onion pancakes. #todiefor #sweetdreamsaremadeofgrease
