Pumpkin Spice Cheesecake

So many more lovely pecans . I could eat a truck load. Light cheesecake that I got a few bites of before my daughter finished it 😂

Had to go for this for dessert, as I am an admitted #pumpkinspicelover. This was not as rich or sweet as I expected, which was nice because I could eat the whole thing without feeling ill at the end haha. It had the perfect amount of pumpkin spice, and was nice and creamy. The vegan whipped cream was awesome, as were the candied pecans on top which were definitely needed to balance all the creaminess. The graham cracker base could have been a little crispier, but otherwise this was pretty great.
