Ginger Biscoff Stuffed Cookie

Another selection from my lovely mom. This was a combination that I’m not accustomed to, but I think it worked. The ginger was present but not overpowering, while the thin filling of biscoff added that rich gooey sweetness. As a #biscofflover the bites with this were my favourite. The cookie dough itself was nice but not amazing, I found the texture a little off.
