What is a Tagine?

A tagine is both a North African dish and the unique earthenware pot in which it's traditionally cooked. Known for its slow-cooked, deeply flavored stews, a tagine typically features tender meat or vegetables, spices, and often dried fruits and nuts. Our vegan version captures the essence of this comforting cuisine, focusing on nutrient-rich chickpeas and a medley of root vegetables, all infused with the signature spice blend, Ras El Hanout.

Ingredients

Gather these simple ingredients to create your delicious tagine:

  • 1 can (approx. 15 oz/400g) rinsed and drained chickpeas
  • 1 can (approx. 15 oz/400g) rinsed and drained butter beans
  • 2 tablespoons olive oil
  • 1 teaspoon garlic and ginger paste
  • 1 teaspoon garlic and herb paste
  • ½ large butternut, cubed
  • 1 extra large carrots, sliced
  • 3 small sweet potatoes, sliced
  • Handful fresh spring onions and garlic chives
  • 4-5 tablespoons Cedar Sesame Co. Ras El Hanout spice blend
  • Handful coconut chips
  • 1 can (approx. 13.5 oz/400ml) coconut milk
  • Salt to taste
  • Fresh coriander and additional coconut chips for serving

Equipment

You'll need a few basic kitchen tools for this recipe:

  • Large pot or Dutch oven (ideally with a lid)
  • Cutting board
  • Sharp knife
  • Measuring spoons
  • Can opener

Instructions

Follow these simple steps to make your flavorful tagine:

  1. Heat the olive oil in a large pot over medium heat. Add the garlic and ginger paste, garlic and herb paste, spring onion, and garlic chives. Sauté for about 1 minute until fragrant.
  2. Stir in the cubed butternut, sliced carrots, and sliced sweet potatoes, along with the Ras El Hanout spice blend. Mix well to coat all the vegetables.
  3. Add enough hot water to just cover the vegetables. Bring to a simmer, then reduce heat to medium and cook until the vegetables are tender, about 15-20 minutes.
  4. Once the vegetables are soft, stir in the chickpeas, butter beans, coconut chips, and coconut milk. Let it simmer for an additional 10 minutes to allow the flavors to meld.
  5. Season with salt to taste before serving.
  6. Serve your Moroccan Chickpea Tagine hot with your choice of rice, and top generously with fresh coriander and additional coconut chips. For an extra "wow" factor, you can lightly toast the coconut chips before serving.

Variations & Adaptations

This versatile tagine recipe can be easily adapted to your preferences:

  • Add More Greens: Stir in a handful of spinach, kale, or chopped collard greens during the last 5 minutes of simmering for extra nutrients.
  • Boost Protein: For an even heartier meal, consider adding red lentils (which will cook down and thicken the stew) or cubed firm tofu when you add the chickpeas.
  • Spice It Up: If you love a little heat, add a pinch of chili flakes or a dash of your favorite hot sauce with the garlic pastes.
  • Citrus Brightness: A squeeze of fresh lemon juice over the top just before serving can brighten all the flavors.
  • Different Vegetables: Feel free to swap or add other root vegetables like parsnips, or non-starchy vegetables like zucchini or bell peppers.
  • Gluten-Free Serving: This tagine is naturally gluten-free! Serve it with gluten-free rice or quinoa for a complete meal.

Tips & Hacks

Enhance your tagine-making experience with these helpful tips:

  • Bloom Your Spices: Sautéing the Ras El Hanout with the aromatic pastes and vegetables helps to "bloom" the spices, intensifying their flavor and aroma before adding liquid.
  • Adjust Consistency: If you prefer a thicker tagine, let it simmer uncovered for a few extra minutes. For a thinner consistency, add a splash more hot water or vegetable broth.
  • Make Ahead & Meal Prep: This tagine tastes even better the next day as the flavors deepen. It's an excellent candidate for meal prepping. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Toasted Coconut Chips: Toasting coconut chips in a dry pan for a few minutes until golden brown brings out their nutty flavor and adds a delightful crunch.
