Lentils always have my back — whether it’s those days when I want beans but
haven’t had the foresight to soak them in advance or those questions about the adequacy of my protein intake, #lentils are the answer. I like the firmness and peppery zing of this green variety, as well as the dependable nutrition they provide at an unbeatable price ($1.69 at the time of this review.) They’re delicious and filling in any number of recipes; recently I’ve taken to stewing them with onion, peppers, tomatoes, and Trader Joe’s soy chorizo. They don’t require much work, just a quick rinse and boil — the epitome of #veganeasychallenge.
