These bags of lentils are so handy. These tiny red lentils are extremely delicate and cook down in a way that they add structure and thickness to the soup. I like to mix them with other lentils to get a variety of textures.

Some kind of lentils is among my #pantryessentials. Red softens easily, which makes it a fun stew thickener when it falls apart, inconspicuously adding protein to a meal. Most recently, I made a Cozy Coconut Carnival Squash, Sweet Potato, and Red Lentil Stew with greens and spicy homegrown chiles. Yum! #veganisnotscary
