This is such a summer dip. And all the flavors work so well together with that little kick of spice. Plus it's filling and has a bit of protein! Love it

I was really proud of this taco salad I made last week. It was so delicious, healthy and extremely satisfying. I topped it with this cowboy caviar from TJs, which is like a salsa with beans, corn, tomato purée in a rich and smoky chipotle sauce. It was a nice addition to the taco salad which included crunchy greens, beefless crumbles, beans, spanish style brown rice, green onion, chopped tomato’s, olives and some corn chips. I added taco sauce too.
