I usually use coconut milk instead of milk/fløte for this #stroganoff, and sometimes I'll toss in rømme if I have leftovers or a box about to expire. I also usually add mushrooms (canned, ready to use), but you can pretty much just add whatever vegetables you want to this #gryterett. It's pretty tasty. I serve this with rice, bread with butter or garlic baguettes, so it's nice and filling, and lasts me 2-3 days easily.
