My FAVORITE crushed tomatoes to make my “Sunday Sauce”. I sauté chopped garlic in a
little olive oil, add the crushed tomatoes, some seasonings (salt, pepper, garlic powder, sugar, oregano and crushed red pepper). Bring to a quick boil then simmer for 20-40 minutes.
Add over pasta with roasted eggplant, add arugula if you like too. Yum!
