I needed a quick and #nutritious lunch yesterday, and my 2023 #veganisnotscary winnings had my
back! My simple yet delicious meal (#mediterranean RightRice base with navy beans, grape tomatoes, and homemade almond soft cheese) took just 15 minutes to whip up. It’s extremely passive (you pretty much just wait for the rice to sit for 12 minutes,) which frees you up to do other tasks while you wait. This one is definitely very flavorful — it has a strong herby, #dill-y taste. I found it a little bit salty, but pretty good overall. I loved the pasta-like texture of this rice substitute. It’s like orzo, if it went on a health kick but was still just as enjoyable. Getting #protein and fiber is effortless (#lazyvegan!) with this tasty “grain!”
