For best results, I recommend leaving the phyllo sheets in the refrigerator for at least 12 hours before using them. Then, take them out to thaw at room temperature for about two hours. One thing to keep in mind is that the sheets can dry out quickly. To prevent this, make sure to keep a cloth over the unused sheets while you you work.
