Vegetable lentil & roasted red pepper soup

Interesting flavor, you can actually taste the roasted red peppers. It was very filling, I liked the vegetable chunks. I added vegan sour cream and it was delicious!

Replicating this as a meal prep, thickening it up and have it over some mash potatoes 🤤 This was so delicious just had these with wheat thins. Ibotta offered 1.00 back and I was able to price match this at Target from Amazon for 2.27 so 1.27 in the end for some comforting soup 👍
