A fantastic late night snack 😋 or side dish. I personally cook them til they’re a bit crispy, bc otherwise I find them too mushy and I prefer the crunch. A little salt and you’re all good to go! #veganisnotscary
Needed a simple side for dinner so had these for the first time. I did them in the oven so they didn’t crisp the way I like. Doing them in an air fryer would have been better. But they did taste great. A good alternative if you like sweet potato
