This was a wonderful gastronomic experience! The combination of the red lentils, butternut squash and
coconut really made this a flavorful dish. It was hearty with a touch of sweetness from the butternut squash. I enjoyed it atop some brown rice and quinoa (see my previous review on this) which I had to add some water and olive oil to. (I accidentally added more oil than needed, which may be why you can see it in the last photo as it is together with the rice and quinoa.) I also noticed that it was not as thick as other members photos here, and I’m unsure why.
This is also a fast and nutritional meal. You can throw it into the microwave, or simmer on the stovetop for a few minutes until hot.
As there are two servings per pouch, each serving contains 180 calories, 7g fat (6g saturated fat from coconut and sunflower), 24g carbs and 6g protein.
