These buckwheat noodles are a great way to increase the #plantdiversity in my diet.

They are #quickandeasy to cook but you need to make sure you rinse with cold water because otherwise they are very sticky and gummy. I like to eat them with sauteed veggies and soy products (like edamame or tofu) and a peanut butter sauce. Buckwheat is a good source of protein, fiber, iron, potassium and B vitamins. Buckwheat is #glutenfree despite the name.
