Here’s another staple in Chinese/Eastern Asian cooking, #sesameoil. It comes in toasted and raw varieties,

which can be easily distinguished by their color and smell.
The toasted version is what’s usually called for in Asian cooking, like this one from Kadoya; whereas the raw version is most commonly used as a “supplement”, at least from what I know.
Because of its strong aroma, sesame oil is usually used as a seasoning, not a cooking oil. Typically you’d add it while finishing a hot dish, or in sauces/dressings, like I did to the smashed cucumber salad. A little goes a long way.

tbh i don’t really notice a difference between the sesame oils i’ve tried. there’s so

many brands and i just get the one that’s the cheapest or on sale. this does the job and is great to add to sauces. #veganuary

This warm, toasty sesame oil provides the perfect finishing touch to a range of Asian

recipes. I usually drizzle it on right before serving, and one of my favorite ways to use it is as dressing for a simple cucumber salad. Kadoya has been my Japanese-American family’s brand of choice for as long as I can remember, and the quality of the oil is consistently good. I prefer to purchase the large bottle, but for some reason the price per unit was higher on my most recent trip to the grocery store. Still, this smaller size will last me a fairly long time.
