I was very curious to try this product from cashewficio, an Italian plant based cheese
maker which makes their products from cashews. I had tasted their seasoned cheeses in the past and they were all amazing and I was looking forward for a plant based alternative to stracciatella, which unfortunately I used to love before going vegan. This product might resemble it a little bit but it’s far away from an actual stracciatella. The consistency looks very similar however the taste is more sour and less sweet. There is however something about it that makes me think about an actual mozzarella. Even if it’s far from a stracciatella made from cow milk I think this is a very good product and it’s a nice treat I will like to indulge in once in a while. I really loved it in this charcuterie board that I made the other day where I also added some peaches (previously warmed un in a pan with some extra virgin olive oil and salt) and agave syrup. I bought this at a vegan fair in Italy but I know their products can be brought online or in selected stores.
