During the summer my favorite breakfast is thick Greek style yogurt, with fresh blueberries and
some granola. This harmless harvest vanilla yogurt tasted pretty good, but it was a little bit more runny than I usually like to have with my berries.
I prefer this kind of consistency for smoothies and drinks. So we decided to use the yogurt to make a very refreshing and delicious mango Lassie, instead.
I'd like to freeze the mango chunks first so that the Lassie is very thick, like a milkshake.
Then we just add:
1½ cups mango
1 cup yogurt
½ cup plant based milk, (I like to use flax)
¼ teaspoon cardamom
We don't typically add any sweetener because we like the sweet-tart taste of the mangoes, but that really depends on how ripe they are and on how sweet you like your drinks. If I do need to sweeten it I usually add a little bit of maple syrup.
Just blend everything up and enjoy! 🥭
