Just to add a small detail about quinoa seeds: as I said previously the seeds are the most important genetic resource then they are protected under a “coat” in the case of quinoa seeds, this coat is made of saponins a chemical class of compounds that are naturally bitter to taste — again in nature to protect the seeds against small predators 🐛 humans have found ways to use saponins in soaps, drugs, cosmetics and more — saponins are useful in industry due to the ability to be dissolved in water and oil (amphipathic property).
