I went vegan and Iām surprised I havenāt seen more people review it here. Itās perfect straight out of the container on its own but it can also be added to other dishes for some substance.
The salad base is comprised of a quinoa and bulgur mix and thereās also mung beans, lentils, cucumbers, tomatoes, red bell peppers and parsley. It has a lemon juice and vinegar based ādressingā that isnāt too heavy (not on the side, itās already mixed into the dish). Itās also decently priced around $10-$13 for a 1kg+ container with an expiry 3 days after the package date (I would recommend eating within the first two days though because after the second day the lemon juice kind of makes it soggy and too acidic tasting).
Anyone who shops at Costco should pick this up next time they go! Itās the perfect salad for summer picnics and also a great āpack your own lunchā for work/school.
I did have to knock some points off because I sadly have to limit my consumption due to the bulgur (gluten) which can easily be removed/replaced with something else to make it gluten free! I think there used to be a version made without the bulgur and there was brown rice instead, but Iām not sure it exists anymore. I personally believe the bulgur can be removed without that much of a difference in the taste, but if there had to be something else in there with the quinoa gluten free couscous would be a good replacement š¤·š»āāļø
