Orecchiette al grano arso ( burnt grain ) are original from Puglia, where according to a tradition, villagers harvested the scorched grains that remained after farmers burnt their fields to make way for new crops or collected the brunt flour off the floor of communal ovens after loaves were baked.
They have a very distinctive toasted-bitter-caramel taste and are best suited to sweet or spicy dressings (in fact they were perfect with pistachio pesto!).
Great quality. Limited edition at Lidl for only 1€!
