One more shot of my caramel cupcakes.🧁 These are the cupcakes I bake the most! One of my staples for baking is also coconut milk! I use 3/4 cup of #coconut cream in my caramel sauce. It helps thicken it up, especially if you're using raw sugar. I prefer this Trader Joe's brand. It's better quality than others I've used and it tends to heat up and stir better. It's also a very good price and under $2 a can. They're easy to store in the pantry as well. I always love their packaging too! I used to make flan with coconut milk even before we went vegan, simply because we like the taste of it better. But once I completely veganized the entire recipe, I realized that, not only is this version so much better than the traditional, but it's also way easier to make. Once the caramel is made, this flan only requires 10 minutes of cooking, to activate the agar, which is what I use as a binding agent. Then just pop it in the refrigerator to chill, and you're done. This is my favorite option as it's got the least about of stuff added to it while still being really thick.
TJ’s organic coconut milk is a good option for any of your recipes calling for coconut milk. Everything they carry in the store is always reasonably priced. I like that they have an organic version of this item. It’s not quite as creamy as some other more expensive brands I’ve used (and their canned goods don’t appear to be BPA-free), but in the end the dish it was added to turned out just fine 😊
