I recieved this sample at a food expo and it has been sitting in my
pantry for a while, so I used it to make Nam Khao (Laotian crispy rice salad) inspired lettuce wraps this weekend.
I used the red curry paste to flavour the rice and tofu which I baked. I think the flavour might have been dulled down a bit by the baking cooking method (as opposed to a curry type dish). It didn't come through as strong as I would have liked, but the wraps were still flavourful and very tasty overall! I have read good reviews about blue elephant's curry pastes, so I would try it again.
