I'm loving Blue Elephant and their fragrant spice kits š„° This was a warming and
soothing treat during these depressing times we live in.
Recipe (serves 3-4):
- 75g #massaman #curry paste
- 400g #coconutcream (Blue Elephant also has this)
- 1 medium-large #aubergine, chunky strips
- 1 medium red onion, diced
- 6-8 button mushrooms, quartered
- 180g #tofu, cut to taste
- 2 tbsp vegetarian powdered #shrimp
- Dash of cinnamon dust
- Pinch of anise seeds
- Ground #peppercorn, to taste
- #rocket garnish, to taste
1. Heat 3 tbsp of vegetable oil and pan fry the vegetables, mushrooms, and tofu. Set aside.
2. Heat 2 tbsp of vegetable oil and fry the curry paste.
3. Add half the coconut cream when fragrant. Bring to a boil. Add sugar if desired.
4. Add the pan-fried ingredients
5. Add the vegetarian shrimp powder
6. Add the second half of the coconut cream. Bring to a boil.
7. Add desired spices/garnishes
