Chewy #bagel 🥯 stacked with lots of refreshingly crunchy and juicy vegetables - tomato, cucumber, lettuce - drizzled in cashew mayonnaise. 🍅🥒🥬 The real highlight was the chickpea mash, which somehow tasted remarkably reminiscent of #tuna mayonnaise!! Even my non-veg friend was mindblown! 🤯 Texture-wise, it leaned towards being a gritty / grainy dressing rather than flaky like real fish. Nonetheless, I was impressed by the plant magic ahaha. 🪄 While there are vegan canned tuna analogues available in the market, I love how Ash uses natural whole foods instead. Chickpea tuna is also not really something I've seen at other vegan eateries in Singapore despite often seeing recipe creators overseas talk about it.
