Vietnamese-inspired bowl of fine rice vermicelli noodles with a generous array of fresh vegetables including mixed mesclun leaves and crunchy red cabbage, served alongside cashew nuts and sunflower seeds, as well as topped with crispy rice paper crackers, beansprouts, fried shallots, coriander, and cut chilli. Light and refreshing with lots of greens, yet flavourful when tossed with the delicious housemade creamy almond dressing! Enjoyed this a lot more than I thought I would~ Would have been nice to have a bit of tempeh included for a protein boost! Cute presentation with the criss-crossed pair of chopsticks.
