This makes a fine quick dinner especially if you dress it up a little with some veggies ! I was on a family trip over the weekend and feeling those #lonelyvegan vibes as the only vegan . My family went to a Mexican restaurant that was super non vegan friendly 🥺 even the guacamole was labeled only vegetarian and not vegan. It reminded me how frustrating that can be when going out, I had forgotten because usually I am going to vegan restaurants only or in much more vegan friendly places !
So I just sat and ate free chips and salsa 😂 while everyone ate animals 😭 and came back to the house to prepare this for my dinner. I added broccoli, tahini, red pepper, nori, black pepper, and fresh lemon. It was tasty and felt healthy 😌 so everyone is happy in the end #veganramen #ricenoodles #noodlesoup
