A friend had told me how delicious the Palusami from Bandaloop was, so I made a point to go there on a recent trip to Kennebunkport. The depth of flavor is incredible! It's a Samoan stew of oven roasted sweet onions, red and poblano peppers, with chickpeas, coconut milk, baby spinach, and fresh herbs, served with basmati rice. Really delicious, and I can imagine it would taste even better on a cold winter night. Would love to learn how to replicate the dish at home. #veganMaine
