Vegan Red Curry Mac

Choice of red curry or cashew pesto tossed w/ penne pasta, cherry tomatoes & spinach. Served w/ toasted artisan bread. I got the red curry and it is SPICY!! Not the traditional Mac and cheese, but very yummy.
