Skordilla and Eggplant

#Skordalia is basically mashed #potatoes with garlic 🧄 That’s the easy description. Wanna know more? It’s made of #mashedpotatoes and flavored with #garlic, crushed #almonds, and #lemon juice. Extra virgin #oliveoil is the way to whip it all together into a smooth, tantalizing dip that you can serve chilled or at room temperature--as a starter to a tasty Greek meal. Here it was topped with soft braised #eggplant 🍆 It also had roasted potatoes and #chickpeas! Some pea shoots for color and red pickled onions for a different flavor. Worked well and was satisfying!
