Primavera Lasagna

Gluten-free pasta sheets layered with tender zucchini, wilted baby spinach, finely minced locally farmed mushrooms, tomato fondue, housemade garlic cashew sauce, and #violife mozzarella #vegancheese. 🥒🥬🍄🍅🧀 Indulgent without being cloyingly so! Not overloaded with starchy carbs either, since there were layers of vegetables instead, which also added variety in taste and texture. I especially loved the diced mushrooms; natural ingredients can be tasty in their own way, without any need for processed plant-based meat substitutes. There were some fresh microgreens as garnishing too. 🥗 Good vegan lasagna is hard to come by in Singapore, and I was honestly really impressed by this!!
