Chickpea omelette stuffed with roasted mushrooms, spinach, and gooey #greenvie mozzarella cheese, topped with #greenvie grated parmesan. Ridiculously delicious and satisfying - I remember eating a non-vegan cheese omelette at a friend's house in my childhood, and this really reminded me of it! Wish we could have chickpea omelette in Singapore too! Nutritious and well-balanced as well - served with a garden salad including pickled cucumber and edible flowers.
