Enoki Seaweed Udon Soup with Yam

🧧Luckily I got to try this before they stopped the CNY seasonal special! 🌊I was apprehensive as I was worried it might be very "fishy", but it turned out pretty enjoyable! I suspect there's some form of sea vegetable infused into the soup, so it's umami with a slight taste of the sea. 💜The yam is oh so creamy but still at the point you can pick it up and chew off! 🍄Especially appreciate the efforts to make the enoki and seaweed roll. Delicious and healthy take on traditional Teochew-style fish soup! The housemade miso-based broth brewed with tomato was super slurp-worthy, paired with chewy nama udon noodles, yam, cabbage, and silken tofu. 🍜🍅🍠🥬 I loved that instead of the typical mock meat (i.e. textured soy protein 'fish'), they made their own whole-food plant-based version using air-fried enoki mushrooms wrapped in seaweed and rice paper!
