I had a team dinner with my colleagues to celebrate one of our work wins. This was one of the two vegan mains on the Coppa Club’s menu - the other one being a vegan burger + fries. I went with the glazed aubergine because honestly it sounded really good & i love trying new dishes. I’m quite happy I went for this. It was absolutely deliciously 🤤 The cheese was creamy but paired well with the pesto sauce. I also loved the quinoa salad it came with. The dish was great overall but wouldn’t have been filling if I hadn’t gotten starters. But I’d highly recommend this restaurant. The ambiance was really nice outside in those pods (see second photo). I just wish they had more vegan dishes to offer 💚
