The Co Chung Impossible pho was pretty good, though not great and pretty pricey. The broth was decent and the Impossible meat worked, but it didn’t hit the spot like some other vegan phos I’ve tried. It was a little sweeter than I’d prefer, and I would’ve liked more fresh herbs. That said, it’s still a good option - I’d definitely be keen to try the other vegan dishes on their menu!
