This consisted of delightfully firm and chewy handmade udon noodles in a creamy, citrusy, and umami-rich cold pistachio, miso, and yuzu broth. Topped with fried zucchini, fresh tomatoes, Ota Tofu atsuage, and chopped pistachios. It was fabulously refreshing and satisfying.
