Calling all #avocadolovers out there!! This starter was out of this world, super delicious in its simplicity. A perfectly ripe, creamy #avocado half filled with tenderly cooked #quinoa and fresh veggies like #cucumber, #redpepper and #redonion along with #raisins - both golden and brown. The dressing is divine, sweet and tangy pulling together all the flavors and textures. All of this on a bed of fresh, crisp lettuce to provide a lovely crunch to it all.

Happy Cactus is another MUST when you visit Fuerteventura. It is an #allveganrestaurant that has been around for years, serving up healthy, tasty fare along with singular smoothies and juices and sumptouous desserts. Their #sustainable and #environmental philosophy is evident throughout, they even don't use straws of any kind! It is nestled in the charming Vilage of Cotillo and has a lovely outdoor seating area.
