Cashew e Pepe is the vegan alternative proposed by Linfa for the traditional Cacio e Pepe, in this dish the cheese is replaced with a cashew cream and all is topped with vegan Parmesan. The result is a very creamy pasta with a cheese-like sauce. It’s a good dish and the quality of the pasta is excellent: you can definitely taste that it is home-made and fresh. However as a vegan cacio and Pepe it’s not the best one I’ve had so far and considering the other dishes tried here probably next time I’d go for something different.
