This consisted of house-made mung bean eggs, vegan cheddar, roasted artichokes and scallions, and was drizzled with citrusy-pepper (ají limo) sauce on top of a tender flaky crust. This latest version of their intensely flavorful quiches is so good! Such a clever and delicious 🌱-based reinvention of a dish that traditionally relies heavily on 🐔🥚 and 🐮🥛.
