This consisted of lion's mane mushrooms, spiced with coriander, caraway, and smoked paprika, and served a Stecca roll with radish greens seasoned with matsutake vinegar, jalapeño kraut, and a creamy black lemon-fermented coriander dressing. With their meaty umami taste and tender consistency, these lion's mane mushrooms were a delicious and convincingly realistic 🌱-based stand-in for 🐥. All the rich and hearty flavors came together to make this very satisfying.
