Blown away by the #vegansushi offerings that Haru Haru in Auburn, #washington has! This small restaurant has a limited #veganmenu of four rolls but they can also #veganize #friedrice and have a few other options.
Their sushi though, is amazing. You can tell there is actual effort for these rolls and not an afterthought. There are various flavors and textures for each roll. This roll had fried shoestring carrots as a topping that were crispy and sweet. For a filling it had a tempura carrot, avocado and a creamy filling that I believe is tofu based. There was crunchiness, creaminess, sweetness and a little spice from wasabi somewhere in the roll.
