Winter Squash Minestrone Soup

This consisted of delicata, butternut, and Mexican grey squash, zucchini, onions, carrots, celery, kale, tomatoes, gluten-free noodles, and white beans simmered in their house veggie stock and garnished with parsley. (GF) This was the best minestrone I’ve ever had. Wonderfully lively flavors.
