Tofu Scrambler

Another delicious vegan dish from The Mad Batter! I kind of expected this to be more like a typical tofu scramble with crumbled tofu, but I actually really liked it diced. Plus the veggies, cheeze sauce, and fruit were all delicious and fresh.
